Quick Bite

 When you have very little time or just not in the mood for extravagances, why not grab a Quick Bite using one of these tried and true recipes. With a glass of your favorite Entwined Wine, you will be relaxing into that favorite chair pretty soon...

French Toast
Beat two eggs, add half a cup of milk, season with salt and pepper, add a teaspoon of mixed herbs and whisk together. Soak as many slices of bread as you require or until the mixture is finished, adding one piece at a time to a hot pan of nice olive oil and fry until golden. Top with  freshly grated parmaesan cheese (and anchovies) on the freshly flipped top side and watch it melt. Feel free to add lashings of whatever makes you happy.
Serve with chutney or relish and a glass of 
Daylesford Wine Co Chardonnay or Pinot Noir.

 

Asparagus Wrapped in Proscuito
Diagonally roll fresh asparagus along thinly sliced proscuito so it is tight. Then grill, bake or BBQ and when asparagus is tender and proscuito becoming dry (not crispy), move to serving dish, squeeze on freshly cut lemon juice and add cracked pepper. Serve with Daylesford Wine Co. Sparkling Cuvee or Sauvignon Blanc.

 


Simple Risotto- Rule of 3's
Bring a heavy based pot to medium heat on the stove, add 2 tablespoons of olive oil, one onion diced (garlic too) and one cup of risotto rice (serves 2) and let them brown a little. Add 3 other ingredients; pumpkin, pinenuts and parmaesan; mushrooms, chicken breast and herbs; bacon, peas and sour cream; mussels, lemon zest and parsley; salami, tomato and dried chilli; whatever is available but keep it limited to three as we find the simple combinations are usually best.
Once coloured, pour in 3 cups of chicken stock, stir well, bring to the boil, stir, put the lid on and turn stove to lowest setting. Stir every 5 minutes until little moisture is left. Some versions may demand more stock. Turn the heat off and leave the lid on. Serve 5 minutes later garnishing with fresh herbs, parmaesan if you wish and seasoning. This is a great recipe if you are on the go and need to return to a cooked meal, or casually entertaining as it allows you to sip and chat, no stress. Serve with which ever wine suits your key ingredients best, they will all do it justice. We like to sip Daylesford Wine Co. Sauvignon Blanc, Pinot Rose or Cabernets. Not fussy here!
